Holiday Appetizer #KoreanInKansas


Probably the best appetizer I’ve have in a while. My MIL smoked the salmon herself!

She used the Big Green Egg to smoke it in the backyard then followed the directions in the recipe below.

We both agreed that it could’ve used less salmon and more cheese, onions and radish.

If you’re still celebrating, try this dish out, and if not… it’s still great for any gatherings!

I only discovered this place because of my husband who is from Leawood Kansas. I love burgers and he was so adamant about taking me here when we first visited his hometown. I fell in love with their quality and service, it became a must visit spot every time we flew in.

Little did we know there was one in Thousand Oaks. Lucky me, I have a project in Calabasas so it’s pretty close to me.

Wedding season has started. And though most of my friends are already married with children, my husband’s friends are all engaged or ready to be engaged. This all makes it extra special for me… he leaves for bachelor parties and I get to enjoy the weekend all by myself! Or take the time to visit friends in NY and Colorado. We have two more weddings this year and he has one more bachelor party to attend.

The day was super warm, I forget how hot and humid Kansas gets. I felt the sweat drip from under my tatas and drip down my fat belly, that’s how hot it was. I tried to stay in my seat most of the night since my dress was fitting very tight and my shoes had never been worn. It was the worst combo for a hot humid day. All in all, we had fun, he had the most fun and we enjoyed the #gettinfitched nuptials.

I had tried the pinot gris at #lksddowney and loved it. NEVER knew they had a rose version until we visited Lukas Liquor while visiting my in-laws in Leawood, Kansas. We had a wedding to go to on Saturday and I picked up two cans for the trip. I only needed one because it’s about two full glasses per can. I will say, I do like the pinot gris better than the rose but both are quite divine. I don’t think I’ve ever enjoyed a roadie before and I was extremely happy about the convenience of this drink. I hope they make a sparkling wine version, I’d be all over that!

Stick a graham cracker with a piece of hershey’s chocolate on it in the microwave for 30 seconds. It’ll be melted perfectly. Take it out and add the marshmallow after it’s been burnt on the stove top. It’ll be the most perfect s’mores you’ve ever had!

So I was completely wrong and I thought this establishment was NOT available in California. I WAS WRONG! Something about their California Style burger tastes better than an In N Out burger. I’m dead serious. Every time we go to Kansas, I want to stop by Freddy’s. We have a trip planned to San Francisco in the coming weeks and I want to convince my husband to make a stop in Thousand Oaks for Freddy’s. I’m not sure if we’re driving or flying but I hope we’re driving.

Their patties are skinny and the veggies are fresh, and something about the combination of everything makes it so tasty. Maybe also because it doesn’t make me feel so heavy after the fact. I was bummed about not being able to try the nutter butter ice cream sandwich, but hopefully I’ll be able to try it soon on our drive to SF.

*UPDATE* My husband just told me that we are driving. Freddy’s HERE WE COME! Can’t wait to try to Nutter Butter!
